10 chinese dishes you should try (from a food obsessed traveler)

i'm no expert but i've eaten my way through quite a few chinese cities. here's my list.

peking duck - beijing. quanjude is touristy but still good. they bring the duck to your table and slice it in front of you. wrap in pancake with cucumber and sauce. amazing.

xiaolongbao (soup dumplings) - shanghai. din tai fung is the famous one but there are smaller shops that are just as good. bite a little hole, blow on it, then eat the whole thing. don't skip the blowing part or you'll burn your mouth. learned that the hard way.

sichuan hot pot - chengdu or chongqing. haidilao is the tourist friendly chain. they do this noodle pulling dance thing which is entertaining. spicy level 1 is still VERY spicy so be careful.

lanzhou hand pulled noodles - anywhere with a hanging cleaver icon on the sign. you watch them pull the noodles by hand. a large bowl is like $3. best cheap meal in china.

dim sum - hong kong or guangzhou. tim ho wan has a michelin star and it's cheap! har gow (shrimp dumplings) and egg tarts are my favorites.

other stuff I love - mapo tofu, kung pao chicken, jianbing (morning crepe from street stalls), wonton soup.

if you don't know what to order just point at someone else's food and say "zhe ge". it works 70% of the time.

what am I missing? I feel like I need to try more street food.
