i don't eat meat. was worried about finding food in china. turned out not that hard.buddhist temples often have vegetarian canteens. the food is cheap and good. try lingyin temple in hangzhou.
look for "su shi" characters on signs. means vegetarian restaurant.
dish to try. mapo tofu. ask for no meat. most places can make it vegetarian.
street food can be tricky. jianbing has egg. scallion pancakes are usually vegan. grilled tofu skewers are good.
hot pot is easy. get a plain broth and load up on tofu and vegetables. tell them "wo bu chi rou" (i don't eat meat).
i used an app called happy cow. shows vegetarian restaurants nearby. helped a lot.
overall i ate well in china as a vegetarian. just needed to be a bit careful.
